&lt;p&gt;Here's a recipe for Whipped Cream from Raw: The Uncook Book by Juliano:&lt;br&gt;_________&lt;br&gt;    1-1/2 cups raw walnuts, cashews, are favorite nuts&lt;br&gt;    filtered water for soaking nuts&lt;br&gt;    1/2 cup fresh-squeezed orange juice&lt;br&gt;    2 tablespoons dates&lt;br&gt;    a few drops of almond extract (optional)&lt;/p&gt;

&lt;p&gt;Cover nuts with water and allow to soak for at least 2 hours.  Drain nuts and add all ingredients to blender.  Blend well, scraping sides continuously until creamy.  Taste for sweetness and consistency - add water if cream is too stiff.  Continue blending until fluffy and smooth.  Use immediately.&lt;br&gt;_________&lt;/p&gt;
